Challenges and opportunities of fermentation in food processing
Ana Pejic is the co-founder and Chief Product Officer at Tempty Foods, a food tech start-up creating foods of the future based on alternative protein source mycelium. The company is a spin-off from a course on sustainable food innovation at Technical University of Denmark (DTU). One of the company’s initial achievements is winning a competition Ecotrophelia Europe 2021 with its first product TEMPTY. Ana’s role in the company is centered on product development, production optimization and sustainability accounting.
Ana holds a MSc degree in Food innovation and health from University of Copenhagen, Denmark, and a BSc degree in Nutrition from University of Zagreb, Croatia. She is passionate about making foods that are good for the people and the planet.
