Olivia is a food scientist by training. She spent the first 10 years of her career working in Europe for Unilever, Bakkavor and Sensient, holding positions linked to product development and operations. In 2015, she decided to switch gears and moved to the US where she was hired by Impossible foods to lead the construction and launch of their first factory. She is now COO of Vital Meat, a leading cultivated meat start-up.
